Peaches and Cream Popsicles
I’m not sure why, but it seems as if summer is in quite a bit of hurry to be on its merry way. And although I tried to coax it into staying just a little bit longer, it was to no avail. It has stubbornly decided it must leave. Luckily, August just happens to be national peach month. And I couldn’t think of any better way to savor the remaining moments of summer than with the natural juicy sweetness of a perfectly ripe peach. Since the temperature has remained relentlessly hot and somewhat unbearable, I opted to make peaches and cream popsicles. They’re refreshing and make a surprisingly sweet and satisfying healthy summer treat.
Ingredients: 2-3 peaches, 6 tablespoons of milk, 1 (5.3 ounce) container of Greek vanilla yogurt, 2 teaspoons of a sweetener of your choice
( I used xylitol).
Puree two peaches. Then mix peach puree, milk, greek yogurt, and sweetener until smooth. Finally, stir in a 1/2 cup of diced peaches.
Fill popsicle molds.
Freeze and wait patiently for about four hours.
Enjoy before they melt! I love the fresh bit of peach in these popsicles.
